Walnut Biscotti

Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. chopped walnuts
  • 4 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract

Directions

  1. preheat oven to 350 F and line a large baking sheet with parchment
  2. whisk flour, sugar, baking powder, and salt; stir in walnuts
  3. in a separate bowl, whisk eggs, vanilla extract, and almond extract until blended
  4. pour wet mixture into dry ingredients and stir until a slightly sticky dough forms, kneading by hand at the end if needed
  5. divide dough in half; shape each half into an 8-inch by 2-inch log on the baking sheet, spaced a few inches apart
  6. bake 22-25 minutes, until firm to the touch and lightly golden
  7. remove from oven (leave oven on) and let logs cool on the pan for exactly 10 minutes
  8. using a serrated knife, cut logs on a slight diagonal into 1/2-inch thick slices
  9. place slices cut-side down on the baking sheet; bake 6-7 minutes, flip, then bake another 6-7 minutes until dry and golden
