Ingredients

  • 2 c. flour
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 stick butter, frozen
  • 1/2 c. buttermilk, cold
  • 1 egg
  • 1 tsp. vanilla (optional)
  • coarse sugar for topping

Directions

  1. whisk flour, sugar, baking powder, and salt
  2. grate frozen butter on box grater
  3. toss butter into flour and work with hands until coarse crumbs
  4. add mix-ins if using
  5. whisk buttermilk, egg, and vanilla separately
  6. pour wet into dry and stir until shaggy
  7. knead briefly until dough comes together
  8. pat into 1-inch thick disk
  9. cut into 8 wedges
  10. freeze 15 minutes
  11. brush with buttermilk and sprinkle coarse sugar
  12. bake 20 minutes until golden

Notes

for flakier scones, fold dough in thirds twice before shaping
