Milk Bar Pie

Ingredients

  • 1 stick butter, softened
  • 1/3 c. brown sugar
  • 3 tbsp. white sugar
  • 1 egg yolk
  • 1/2 c. flour
  • 1 1/2 c. rolled oats
  • 1/8 tsp. baking powder
  • pinch baking soda
  • 1/2 tsp. salt

crust:

  • oat cookie crumbs
  • 1 tbsp. brown sugar
  • 1/4 tsp. salt
  • 4 tbsp. melted butter

filling:

  • 1 1/2 c. white sugar
  • 3/4 c. brown sugar
  • 1/4 c. milk powder
  • 1 1/2 tsp. salt
  • 1 c. melted butter
  • 3/4 c. heavy cream
  • 1/2 tsp. vanilla
  • 8 egg yolks

Directions

  1. cream butter and sugars until fluffy
  2. beat in egg yolk until pale
  3. mix in flour, oats, baking powder, baking soda, and salt
  4. spread thin on parchment-lined sheet
  5. bake 15 minutes until golden
  6. cool completely

crust:

  1. pulse cookie with brown sugar and salt in food processor
  2. add melted butter and knead into ball
  3. press into 2 pie tins, bottom and sides

filling:

  1. combine sugars, milk powder, and salt in stand mixer on low
  2. add melted butter and mix 2 minutes
  3. add cream and vanilla, mix until combined
  4. add yolks and paddle until smooth
    • keep speed low to avoid adding air

baking:

  1. fill crusts three-quarters full
  2. bake 15 minutes at 350 F
  3. reduce to 325 F and bake 5 more minutes
  4. cool, then freeze at least 3 hours
  5. dust with powdered sugar to serve

Notes

must freeze before serving for proper texture
