Milk Bar Pie

Ingredients
oat cookie:
- 1 stick butter, softened
- 1/3 c. brown sugar
- 3 tbsp. white sugar
- 1 egg yolk
- 1/2 c. flour
- 1 1/2 c. rolled oats
- 1/8 tsp. baking powder
- pinch baking soda
- 1/2 tsp. salt
crust:
- oat cookie crumbs
- 1 tbsp. brown sugar
- 1/4 tsp. salt
- 4 tbsp. melted butter
filling:
- 1 1/2 c. white sugar
- 3/4 c. brown sugar
- 1/4 c. milk powder
- 1 1/2 tsp. salt
- 1 c. melted butter
- 3/4 c. heavy cream
- 1/2 tsp. vanilla
- 8 egg yolks
Directions
oat cookie:
- cream butter and sugars until fluffy
- beat in egg yolk until pale
- mix in flour, oats, baking powder, baking soda, and salt
- spread thin on parchment-lined sheet
- bake 15 minutes until golden
- cool completely
crust:
- pulse cookie with brown sugar and salt in food processor
- add melted butter and knead into ball
- press into 2 pie tins, bottom and sides
filling:
- combine sugars, milk powder, and salt in stand mixer on low
- add melted butter and mix 2 minutes
- add cream and vanilla, mix until combined
- add yolks and paddle until smooth
- keep speed low to avoid adding air
baking:
- fill crusts three-quarters full
- bake 15 minutes at 350 F
- reduce to 325 F and bake 5 more minutes
- cool, then freeze at least 3 hours
- dust with powdered sugar to serve

must freeze before serving for proper texture
