Ingredients
filling:
- 1.5 lbs. mixed mushrooms, chopped
- 2 cloves garlic, sliced
- 1 tbsp. fresh thyme leaves
- 2 tbsp. flour
- 1 c. vegetable stock
- 1 c. cream
- lemon juice
- butter or oil
- salt and pepper
topping:
- 1 sheet puff pastry
- 1 egg yolk
Directions
filling:
- brown mushrooms in butter, working in batches
- add garlic and thyme, cook 1 minute
- stir in flour
- pour in stock and cream, whisk smooth
- simmer until thick, about 10 minutes
- season with lemon, salt, and pepper
assembly:
- divide filling into ramekins
- cut pastry circles to fit
- press pastry over ramekins and crimp edges
- cut slits for steam
- brush with egg yolk
- bake 20 minutes until golden
