Mushroom Pot Pie

Ingredients

filling:

  • 1.5 lbs. mixed mushrooms, chopped
  • 2 cloves garlic, sliced
  • 1 tbsp. fresh thyme leaves
  • 2 tbsp. flour
  • 1 c. vegetable stock
  • 1 c. cream
  • lemon juice
  • butter or oil
  • salt and pepper

topping:

  • 1 sheet puff pastry
  • 1 egg yolk

Directions

filling:

  1. brown mushrooms in butter, working in batches
  2. add garlic and thyme, cook 1 minute
  3. stir in flour
  4. pour in stock and cream, whisk smooth
  5. simmer until thick, about 10 minutes
  6. season with lemon, salt, and pepper

assembly:

  1. divide filling into ramekins
  2. cut pastry circles to fit
  3. press pastry over ramekins and crimp edges
  4. cut slits for steam
  5. brush with egg yolk
  6. bake 20 minutes until golden
