Ingredients
- 8 oz. lo mein egg noodles (can use spaghetti, linguine, or bucatini)
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- 2 cups cremini mushrooms, sliced
- 1 carrot, sliced
- 1/2 cup frozen peas
- 3 cups spinach
Sauce
- 2 tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. sesame oil
- 1/2 tsp. ground ginger
- 1/2 tsp. hot sauce
Directions
- whisk sauce ingredients together and set aside
- cook and drain noodles
- heat olive oil in large skillet over medum high heat
- cook garlic, mushrooms, and carrot until tender, stirring frequently (3 to 4 minutes)
- stir in snow peas and spinach, cooking until spinach wilts (2 to 3 minutes)
- stir in noodles and sauce, cooking briefly
- serve immediately
