Lo Mein

Ingredients

  • 8 oz. lo mein egg noodles (can use spaghetti, linguine, or bucatini)
  • 1 tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 cups cremini mushrooms, sliced
  • 1 carrot, sliced
  • 1/2 cup frozen peas
  • 3 cups spinach

Sauce

  • 2 tbsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp. sesame oil
  • 1/2 tsp. ground ginger
  • 1/2 tsp. hot sauce

Directions

  1. whisk sauce ingredients together and set aside
  2. cook and drain noodles
  3. heat olive oil in large skillet over medum high heat
  4. cook garlic, mushrooms, and carrot until tender, stirring frequently (3 to 4 minutes)
  5. stir in snow peas and spinach, cooking until spinach wilts (2 to 3 minutes)
  6. stir in noodles and sauce, cooking briefly
  7. serve immediately
