Ingredients

Chicken

  • 1 lb. boneless, skinless chicken breast
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground ginger
  • 1 tbsp. olive oil
  • salt
  • pepper

Roast

  • 1 head cauliflower, diced
  • 1 onion, diced
  • 1 tbsp. olive oil
  • salt
  • pepper

Dressing

  • 1 clove garlic, minced
  • 2 tbsp. peanut butter
  • 1/4 cup lime juice (1 lime)
  • 1 tbsp. honey
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • 1 tbsp. olive oil

Serving

  • 4 cups cooked brown rice
  • 2 cups spinach
  • avocado
  • sesame seeds

Directions

  1. toss cauliflower and onion with 1 tbsp. oil, salt, and pepper
  2. bake until tender, 20 to 25 min.
  3. heat 1 tbsp. oil in large skillet over medium-high heat
  4. season chicken with garlic powder, ginger, salt, and pepper
  5. cook until golden, about 8 minutes per side
  6. whisk together dressing ingredients
  7. layer rice, cauliflower, sliced chicken, avocado, and spinach in each bowl
  8. top with sesame seeds and dressing
