Ingredients
Chicken
- 1 lb. boneless, skinless chicken breast
- 1/2 tsp. garlic powder
- 1/2 tsp. ground ginger
- 1 tbsp. olive oil
- salt
- pepper
Roast
- 1 head cauliflower, diced
- 1 onion, diced
- 1 tbsp. olive oil
- salt
- pepper
Dressing
- 1 clove garlic, minced
- 2 tbsp. peanut butter
- 1/4 cup lime juice (1 lime)
- 1 tbsp. honey
- 1 tbsp. soy sauce
- 1 tbsp. sesame oil
- 1 tbsp. olive oil
Serving
- 4 cups cooked brown rice
- 2 cups spinach
- avocado
- sesame seeds
Directions
- toss cauliflower and onion with 1 tbsp. oil, salt, and pepper
- bake until tender, 20 to 25 min.
- heat 1 tbsp. oil in large skillet over medium-high heat
- season chicken with garlic powder, ginger, salt, and pepper
- cook until golden, about 8 minutes per side
- whisk together dressing ingredients
- layer rice, cauliflower, sliced chicken, avocado, and spinach in each bowl
- top with sesame seeds and dressing
