Ingredients
- 2 chicken breasts
- salt and pepper
- 1 tbsp. olive oil
- 1 tbsp. butter
- pesto (1 to 2 tbsp. per chicken breast)
- 6 slices fresh mozerella
- 8 small tomatoes, sliced
- balsamic glaze
- fresh basil
Directions
- slice chicken breasts in half lengthwise
- season both sides with salt and pepper
- heat skillet on medium high
- add olive oil and butter, wait until butter melts into oil
- cook chicken breasts on each side until lightly browned (3-4 min)
- cover chicken breasts with pesto, mozerella, and tomatoes
- bake for 10-12 minutes
- garnish with balsamic glaze and basil
