Singapore Noodles

Ingredients

sauce:

  • 1 tbsp. soy sauce
  • 1 tbsp. white wine
  • 1 tsp. sesame oil
  • 2 cloves garlic, minced

noodles:

  • 1 package Maifun noodles (4 oz.)
  • 12 oz. firm tofu, drained
  • 2 tbsp. sesame oil
  • 1/2 onion, sliced
  • 1 cup frozen peas
  • baby carrots, sliced
  • 1/2 tsp. tumeric
  • 1/2 tsp. curry powder
  • salt
  • chopped scallions
  • sesame seeds
  • 2 green onions

Directions

  1. cook noodles, drain, rinse with cold water, and set aside
  2. mix sauce ingredients and set aside
  3. cube tofu
  4. add 1 tbsp. oil to skillet over medium heat
  5. cook tofu then set aside on paper towel and season with salt
  6. stir fry onion and carrot
  7. add peas, continue to stir fry for 2 min.
  8. transfer vegetables to bowl
  9. add 1 tbsp. oil to skillet and stir fry noodles for 2 min.
  10. stir in tofu and vegetables
  11. stir in curry powder and tumeric
  12. stir in sauce
  13. remove from heat, serve with scallions and sesame seeds
