Ingredients
- 1 cup rice
- 2 teaspoons oil
- 2 eggs
- 1/4 can Spam, sliced
- 1 carrot, sliced
- 2 green onions
- 1/2 cup frozen peas
- 1 tbsp. soy sauce
- sesame seeds
Directions
- cook rice
- chop shallots, separating whites and greens
- heat oil in non-stick pan over medium heat
- add eggs, cooking until set (2 min.)
- transfer eggs to a chopping board, cut into short strips
- cook Spam slices until light golden (4 min.)
- add carrot slices
- stir fry for 1 min.
- add shallot whites, peas, and rice
- stir fry for 4 min.
- add egg and soy sauce
- stir fry for 1 min.
- remove from heat, serve with sesame seeds and shallot greens
