Fried Rice

Ingredients

  • 1 cup rice
  • 2 teaspoons oil
  • 2 eggs
  • 1/4 can Spam, sliced
  • 1 carrot, sliced
  • 2 green onions
  • 1/2 cup frozen peas
  • 1 tbsp. soy sauce
  • sesame seeds

Directions

  1. cook rice
  2. chop shallots, separating whites and greens
  3. heat oil in non-stick pan over medium heat
  4. add eggs, cooking until set (2 min.)
  5. transfer eggs to a chopping board, cut into short strips
  6. cook Spam slices until light golden (4 min.)
  7. add carrot slices
  8. stir fry for 1 min.
  9. add shallot whites, peas, and rice
  10. stir fry for 4 min.
  11. add egg and soy sauce
  12. stir fry for 1 min.
  13. remove from heat, serve with sesame seeds and shallot greens
