Ingredients

  • 6 tbsp. tapioca flour
  • 2 tbsp. boiled water
  • sugar syrup

Directions

  1. mix tapioca flour and water with fork in a bowl
  2. knead until dough becomes smooth
  3. roll dough into thin sticks
  4. cut into small pieces (smaller than straw diameter)
  5. roll each piece into a ball
  6. at this point, tapioca balls can be frozen for later
    • freeze on a tray so they don’t stick together
    • can combine in bag once frozen
  7. bring water to boil in small saucepan or pot
  8. cook pearls for 15+ minutes until they’re soft and chewy
  9. remove from heat and let rest for five minutes
  10. put in bowl with sugar syrup
  11. let sit for 10+ minutes
  12. transfer from syrup to drink with a slotted spoon
