Ingredients
- 6 tbsp. tapioca flour
- 2 tbsp. boiled water
- sugar syrup
Directions
- mix tapioca flour and water with fork in a bowl
- knead until dough becomes smooth
- roll dough into thin sticks
- cut into small pieces (smaller than straw diameter)
- roll each piece into a ball
- at this point, tapioca balls can be frozen for later
- freeze on a tray so they don’t stick together
- can combine in bag once frozen
- bring water to boil in small saucepan or pot
- cook pearls for 15+ minutes until they’re soft and chewy
- remove from heat and let rest for five minutes
- put in bowl with sugar syrup
- let sit for 10+ minutes
- transfer from syrup to drink with a slotted spoon
