Mushroom & Tofu Adobo

Ingredients

  • 1 block tofu (extra firm)
  • 1/3 c. soy sauce
  • 1/3 c. white vinegar
  • 3 garlic cloves, minced
  • 1 tbsp. corn starch or flour
  • 1 1/2 c. sliced mushrooms
  • ground pepper
  • olive oil or sesame oil
  • bay leaves

Directions

  1. remove tofu block from packaging and drain fluids
  2. use heavy object to press tofu for 20 minutes
  3. slice tofu into one inch strips
  4. combine soy sauce, vinegar, garlic, and pepper
  5. coat tofu with sauce mixture
  6. remove tofu from sauce mixture then coat with corn starch, let sit 10 minutes
  7. marinate mushrooms in sauce mixture for 10 minutes
  8. fry tofu in small batches over medium high heat until browned
  9. add mushrooms, sauce, and bay leaves to fry pan
  10. simmer down and add corn starch to thicken
  11. serve tofu and mushrooms over rice
