Scallion Tofu

Ingredients

tofu:

  • 1 block firm tofu
  • vegetable oil for frying

scallion sauce:

  • 1 tbsp. sugar
  • 2 tbsp. light soy sauce
  • 2 tbsp. water
  • 1/4 tsp. mushroom seasoning powder
  • 2 tbsp. chopped scallion

Directions

  1. wrap tofu in paper towels and press under heavy object for a few minutes
  2. cut into 1.5 inch cubes
  3. heat oil until bubbles form around a chopstick
  4. fry tofu until golden on all sides
  5. drain on paper towels
  6. combine sauce ingredients in a bowl
  7. dip hot tofu into scallion sauce and remove immediately
    • tofu absorbs sauce better while still hot
    • scallion will cling to the pieces
  8. serve with rice
