Ingredients
dough:
- 1 1/2 cups warm water
- 1 tbsp. sugar
- 2 tsp. salt
- 1 package active dry yeast
- 4 1/2 cups flour
- 2 oz. unsalted butter
boil and bake:
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk beaten with 1 tbsp. water
Directions
prepare dough:
- combine warm water, sugar, and salt in stand mixer bowl
- sprinkle yeast on mixture and let sit for 5 min.
- add flour and butter
- using dough hook attachment, mix on low speed until combined
- knead in mixer at medium speed for five minutes
- remove dough and clean/oil bowl
- return dough to bowl, cover with plastic wrap
- let dough sit in a warm place for 50 min.
shape pretzels:
- preheat oven and boil water with baking soda
- line a baking sheet with parchment paper
- boil water with baking soda
- place dough onto lightly floured surface
- divide dough into 12 equal parts
- roll each piece into a thin rope
- lay in a U-shape, cross ends over each other and press into the bottom of the U
boil and bake:
- one by one, place pretzels into the boiling water for 30 seconds each then place onto baking sheet
- brush the top of each pretzel with egg wash
- sprinkle with salt
- bake 12 to 14 minutes
- cool on rack
