Soft Pretzels

Ingredients

dough:

  • 1 1/2 cups warm water
  • 1 tbsp. sugar
  • 2 tsp. salt
  • 1 package active dry yeast
  • 4 1/2 cups flour
  • 2 oz. unsalted butter

boil and bake:

  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk beaten with 1 tbsp. water

Directions

prepare dough:

  1. combine warm water, sugar, and salt in stand mixer bowl
  2. sprinkle yeast on mixture and let sit for 5 min.
  3. add flour and butter
  4. using dough hook attachment, mix on low speed until combined
  5. knead in mixer at medium speed for five minutes
  6. remove dough and clean/oil bowl
  7. return dough to bowl, cover with plastic wrap
  8. let dough sit in a warm place for 50 min.

shape pretzels:

  1. preheat oven and boil water with baking soda
  2. line a baking sheet with parchment paper
  3. boil water with baking soda
  4. place dough onto lightly floured surface
  5. divide dough into 12 equal parts
  6. roll each piece into a thin rope
  7. lay in a U-shape, cross ends over each other and press into the bottom of the U

boil and bake:

  1. one by one, place pretzels into the boiling water for 30 seconds each then place onto baking sheet
  2. brush the top of each pretzel with egg wash
  3. sprinkle with salt
  4. bake 12 to 14 minutes
  5. cool on rack
