Ingredients
- 2/3 c. peach preserves
- 2 tbsp. grated, peeled fresh ginger
- 2 cloves garlic
- 2 tbsp. soy sauce
- 1 tbsp. spiced tea or black tea leaves
- 4 chicken quarters, skinned
- 1 1/2 tsp. vegetable oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions
- preheat oven to 350 F
- use a food processor to combine preserves, ginger, garlic, soy sauce, and tea leaves, until chunky smooth
- heat pan with oil over medium-high heat
- sprinkle quarters with salt and pepper
- brown chicken in pan, 6-8 min.
- pour glaze over chicken
- transfer pan to oven
- bake 40 min., until chicken has cooked through and glaze has thickened
- while baking, occasionally pour juices back over meat
