Dad's Glazed Chicken

Ingredients

  • 2/3 c. peach preserves
  • 2 tbsp. grated, peeled fresh ginger
  • 2 cloves garlic
  • 2 tbsp. soy sauce
  • 1 tbsp. spiced tea or black tea leaves
  • 4 chicken quarters, skinned
  • 1 1/2 tsp. vegetable oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. preheat oven to 350 F
  2. use a food processor to combine preserves, ginger, garlic, soy sauce, and tea leaves, until chunky smooth
  3. heat pan with oil over medium-high heat
  4. sprinkle quarters with salt and pepper
  5. brown chicken in pan, 6-8 min.
  6. pour glaze over chicken
  7. transfer pan to oven
  8. bake 40 min., until chicken has cooked through and glaze has thickened
  9. while baking, occasionally pour juices back over meat
