Ingredients
fish:
- 3 tbsp. olive oil
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1 1/2 lb. cod (or other flaky white fish)
- cooking oil
- salt
- pepper
- lime or lemon juice
slaw:
- 1/4 c. mayonnaise
- 1/4 c. finely chopped onion
- 2 tbsp. chopped cilantro
- 1 tbsp. honey
- 1 small chopped tomato
- 2 c. shredded cabbage
- 1 c. corn kernels
- salt
- pepper
- lime or lemon juice
Directions
fish:
- mix 3 tbsp. olive oil, lime juice, chili powder, cumin, and cayenne
- add fish, marinate for 15 minutes
- heat pan with oil over medium-high heat
- add marinated cod, season both sides with salt and pepper
- cook 5 minutes per side
- flake with a fork
slaw:
- mix mayonnaise, lime juice, cilantro, and honey
- stir in cabbage, tomato, onion, and corn
- add salt, pepper
serve:
- wrap tortillas in moist paper towel
- microwave tortillas for 45 sec
