Fish Tacos

Ingredients

  • 8 corn tortillas

fish:

  • 3 tbsp. olive oil
  • 2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1 1/2 lb. cod (or other flaky white fish)
  • cooking oil
  • salt
  • pepper
  • lime or lemon juice

slaw:

  • 1/4 c. mayonnaise
  • 1/4 c. finely chopped onion
  • 2 tbsp. chopped cilantro
  • 1 tbsp. honey
  • 1 small chopped tomato
  • 2 c. shredded cabbage
  • 1 c. corn kernels
  • salt
  • pepper
  • lime or lemon juice

Directions

fish:

  1. mix 3 tbsp. olive oil, lime juice, chili powder, cumin, and cayenne
  2. add fish, marinate for 15 minutes
  3. heat pan with oil over medium-high heat
  4. add marinated cod, season both sides with salt and pepper
  5. cook 5 minutes per side
  6. flake with a fork

slaw:

  1. mix mayonnaise, lime juice, cilantro, and honey
  2. stir in cabbage, tomato, onion, and corn
  3. add salt, pepper

serve:

  1. wrap tortillas in moist paper towel
  2. microwave tortillas for 45 sec
